Need inspiration for cooking some days?  As much as I love to eat amazing food and try to get the most nutrients I can in a day, there are times when the energy and desire to make something to eat is quite low.  And that’s okay.

Having a few quick and easy items on hand and in mind is a life saver on those types of days.  Maybe these ideas will help you when you get stuck with needing some inspiration.  With the warmer weather, cooking now feels like less of a need, so these quick ideas can save you time but still give you great meal options when you just want something simple but still healthy.

Ideas that could be a great snack or a simple meal:

A big lettuce leaf with a chunk of left over chicken or slice of sandwich meat with cheese rolled up.

Left over rice with a handful of spinach or other green goodies, chickpeas, cashews and dressing.

Hummus with pea pods or carrots or cucumber or broccoli or cauliflower.

Whole grain toast with avocado and egg and tomato.

Quick breakfast ideas but also good for any meal:

Granola with yogurt and frozen or fresh blueberries or raspberries (any berries or cherries).

Baked oatmeal or steel cut oats with apples and cinnamon and eggs.

Maybe some of these options will come to mind in those moments of being “hangry” but don’t want to cook, and keep us from ending up with poor quality foods.

All of those ideas above have a nice mix of fats, protein and carbs (fibre) to help keep our blood sugar stable as well as keeps us feeling full and satisfied longer.

There are so many other simple ideas - “goggle” is full of more options, just aim to find ones where the list of ingredients is 5 or so and that they are whole food sources.  That will give you the most energy and beneficial nutrients.  Having a go to list of options like this makes life so much easier!

Enjoy your week!

Lisa.
