Time to talk about the greens brothers - spinach, swiss chard and kale!

When you think that a serving of leafy greens is about a cup, why not try to add a cup each day by having half a cup with your breakfast and half a cup with your dinner?  Adding one more serving a day of vegetables in the form of leafy greens can help to increase nutrients for energy, digestion, immune function, brain power, clarity, skin, sense of well being - and many more benefits.

How do you add half a cup for breakfast?  If you make eggs, add greens to a scramble or omelette - maybe even add some onions and peppers to aim for more veggies than eggs in there!  Add half a cup to your favourite fruit smoothie.  Google green smoothie recipes - there are many options.  If the smoothie colour doesn’t come out a nice vibrant green and it’s a colour you aren’t inspired by, add a cubed inch of raw beet to get an amazing fuschia colour smoothie - you’ll be excited, honest!

For dinner, add leafy greens raw and fresh to your salad or mince some garlic and pan fry it with coconut oil.  A half cup ends up being very small when you fry it.  You can also chop some very small and add it to soups, chilli, stir fry, the sky is the limit - just add it to anything, really.

I must also mention kale chips.  If you have not tried them, try a small bag of pre-made ones just to see what you are missing out on.  They are easy to make, but some people need to really know how good they are before they tackle that recipe.  Again, Google - lots of good kale chip recipes.  Imagine not feeling guilty eating chips, but having the same crunch and feel, and knowing they are so good for you!  You're welcome!

If you have lots of greens on hand and can’t use them up quick enough, freeze them, and use them later. Frozen works great especially for smoothies and frying with garlic.
