Who loves rainbows?  We should all have more rainbows in our lives, including the ones found on our plates.

Study after study is proving that a diet rich in fruits and vegetables is linked to improved health. Vegetables and fruits are loaded with vitamins, minerals, fiber, and antioxidants that can help protect you against many diseases, control blood pressure, and support eye sight and digestion.

Different colors bring different vitamins, minerals and antioxidants in veggies and fruits.  For example orange pigment found in carrots, pumpkin, and sweet potatoes contain the antioxidant beta-carotene. The deep red pigment found in tomatoes contains the antioxidant lycopene, which is linked with prostate health. Green colors found in our leafy greens are great sources of iron.

Choosing seasonal, local foods is often more economical, environmentally responsible, supports the local economy and the produce is often more delicious and nutrient dense!

An easy way to make sure you’re getting all your servings is to have ½ your plate veggies and fruits.  Enjoy!
