Imagine a salad that could be a part of making your summer memories.

 

You know when you do something and you realize a good habit is about to appear?

 

I had the most inspirational dinner last week.  We went out for a celebration dinner and I had a salad that I recall just loving when I had it a number of years ago.  Well, that one meal has sparked my summer time meal agenda.

 

It is called The Beach Salad.  You can find replicas online, but I will share a version of it here.

 

All I can say is….. It is truly amazing.  And, it is 100% easy and replicate-able.  I have made it at home twice again this past week and my whole family is saying we need to have it at least twice a week going forward.  

 

The ideas already popping up….  

Late weeknight dinner and need a no brainer meal - check!

Going to a BBQ or need something to take to an event - check!

Leftovers for a delicious quick lunch - check!

Anything and everything.  It is seriously crazy good.

 

I didn’t even get into the healthy nutrient dense ingredients of it, but that is a great side benefit that is it so full of goodness as well.   All of the veggies, fruit, healthy fats and proteins packed in here will add to your bodies resources. 

 

And, all of these ingredients be easily found at your local Quality Greens market.

 

Note, there are many simple swaps if you don’t have the below exact ingredients on hand.  We didn’t have lemons so we used limes.  Also, you can use feta instead of goat cheese.  However if you haven’t tried goat cheese, this is your chance, it is so soft and creamy and goes amazing in this salad.  Also you can use slivered almond instead of the seeds.  

 

The Beach Salad

Ingredients 

7 cups of greens (any or all of lettuce, spinach, etc)

1 avocado cubed

2 cups sliced fresh strawberries

1/4 cup soft goat cheese

1/2 cup pumpkin or sunflower seeds

    **toast seeds in pan on medium heat with 2 Tbsp of sugar to coat/candy for about 5 minutes

Optional - I like to add 1 cup of cooked quinoa (red is great but regular is perfect as well).

 

Lemon Poppy Seed Dressing

Ingredients 

2/3 cup extra virgin olive oil 

1/2 cup sugar 

1/3 cup fresh squeezed lemon juice

1 1/2 tablespoons poppy seeds

2 teaspoons finely chopped onion

1 teaspoon Dijon mustard 

1/2 teaspoon unrefined salt 

 

Instructions

Blend dressing ingredients in a blender or in mason jar with an immersion blender until smooth. 

*If not using all at once you can store in an airtight container in the refrigerator up to 1 week. 

 

Place the greens into a large bowl and add some of the dressing and toss. 

Add the avocado, strawberries, and candied seeds to the top and give it a little shake to mix up a bit.  Using your fingers pull  apart the goat cheese into small pieces and sprinkle over the salad.  Drizzle a bit more dressing over the completed salad until it is just right for you.
