What feels the most helpful at this current time to write about here? Well, I am thinking maybe some simple meal ideas for a hot summer day? Does that fit the needs of most this week? I hope so!
I have a few ideas to keep the kitchen from heating up, while also trying to make sure we get cooling and the most nutrient dense foods that e can get. I mean, we can find lots of quick and cool foods to eat, but sometimes those options are not the most beneficial for us health wise.
So, here is a list of some healthy simple summer meal ideas:
LUNCH - ROLL UPS: Green leaf lettuce with your favourite sandwich meat (preferably ones with the least or no preservatives/nitrates) laid flat on top, place on one side a slice of cheese, and some thin slices of apple. Roll it up like a burrito.
SNACK/MEAL - AVOCADO TOAST - If you haven’t had this, I’m begging you to try it. There are many options, but the basics are a nice bread, usually a grain fill bread, but really anything can go. First, mash your avocados and add some salt. That is all you need. However, you can also add in any of these items: garlic or onions or herbs like basil or cilantro. You can also add on tomatoes and a drizzle of balsamic vinegar.
DINNER - KABOBS - Using the BBQ can keep the heat out of your kitchen. A kabob with proteins like chicken, shrimp, or beef, plus your choice of veggies like zucchini, tomato, onion, mushrooms, and red pepper. Add some salt and you have a happy plate.
You can find the majority of these ingredient in your local Quality Greens market. Simple!
