These popsicles combine the sweetness of cherries, creaminess of yogurt and tarteness of lemon for a tasty summer treat that you could even justify eating for breakfast!
Makes 10-12 popsicles.
Ingredients
2 cups of fresh cherries, pitted (to puree)
1 lemon, juiced
2 cups greek yogurt
5 tbs honey
Directions
Puree cherries in blender or food processor and press through a fine strainer to create cherry juice. Add lemon juice and stir.
In a separate bowl, mix honey and yogurt. Add half to the cherry mixture and stir.
Fill popsicle molds 1/3 full with cherry mixture, then add the remaining yogurt mixture. Top off with the rest of the cherry mixture.
Optional - add a few pitted and roughly chopped cherries to each popsicle for added texture.
