Cloud bread is a delicious and satisfying substitute for bread. Not only is it gluten-free, but it is also keto diet friendly. Toast it for breakfast, pile high with toppings for a tasty sandwich or just eat it as is!
3 large eggs (Better if they are room temp)
3 tbsp softened cream cheese
1/4 tsp cream of tartar
1/4 tsp salt
Optional: Add your own selection of herbs, such as garlic powder or Italian seasoning to make an extra-savory cloud bread perfect for sandwiches.
Preheat oven to 300 degrees, and line two baking sheets with parchment paper.
Separate egg whites from yolks, and place in separate bowls.
Egg Yolk Bowl: Add cream cheese and mix well.
Egg White Bowl: Add cream of tartar and salt (and seasoning if you choose). Use a hand mixer or stand up mixer and mix until stiff peaks form.
Slowly add yolk mixture to egg white mixture and carefully fold in until there are no white streaks.
Spoon mixture onto prepared baking sheet about ½ to ¾ inches tall and about 5 inches apart.
Bake in oven on middle rack for 30 minutes, until tops are lightly golden.
Allow to cool, and enjoy!
Tips: Make sure cloud bread is cooled before enjoying.
Keep cloud bread in the fridge in an airtight container.
Make sure you don't underbake or you will have a very soggy, eggy texture.
If you toast your cloud bread, it only takes a couple seconds so be sure to watch it!
