Brussel sprouts and pumpkin seeds give this fall power bowl the healthy energy you need to refuel after a long day. It's delicious and comforting, and comes together in less than a half hour.
1. Cook quinoa according to package instructions
2. Sautee brussels sprouts for approximately 15 minutes or until lightly browned and tender
3. Slice half avocado
4. In a large salad bowl mix together arugula, cooked quinoa, brussels sprouts, pumpkin seeds and avocado
5. Drizzle with your favourite dressing. We like locally made Little Creek and Oma Goodness!
