Winter vegetable mashes make for delicious accompaniments to any holiday event—the addition of coconut milk and lime here creates a beautifully distinct flavour that will be an instant favourite. This recipe doubles and triples well.
1 parsnip
2 medium carrots
5 garlic cloves, whole, peeled
1/2 tsp salt
1/2 tbsp lime juice
1/2 tsp maple syrup or agave nectar
3 tbsp coconut milk
Scrub veggies and chop into ¾ inch pieces. Combine veggies and garlic in medium bowl, drizzle with olive oil, add salt. Toss to coat and transfer onto parchment-lined baking sheet and put into 400 F oven. Roast 40 min (remove garlic after 30 min.) Transfer to food processor, add remaining ingredients and process until smooth.
