These tasty and nutritious fajitas can be made two ways: baked in the oven on a sheet pan, or sauteed in a skillet. Either way, they’re a fun and easy-to-make meal the whole family will enjoy.
1 ½ pounds boneless, skinless chicken breasts, cut into strips
3 bell peppers (different colours), seeded and cut into strips
1 medium red onion, cut into strips
2 tablespoons olive oil
2 tablespoons fajita seasoning (or see below to make your own)
2 limes: 1 for juicing and 1 to serve as wedges
Flour tortillas
¼ cup cilantro (optional garnish)
Additional toppings as desired (shredded cheese, guacamole, sour cream, hot peppers or hot sauce)
Fajita Seasoning Ingredients:
2 teaspoons chili powder
1 teaspoon paprika
½ teaspoon ground cumin
½ teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon dried oregano
¼ teaspoon cayenne pepper
½ teaspoon sugar
1 teaspoon salt
