Red onion jam (sometimes called marmalade or chutney) is a flavour-packed condiment that adds a sweet and savoury note to burgers, chicken, pizza, you name it! It’s also a delicious accompaniment to a cheese board, pairing well with creamy brie or goat cheese.
1 pound red onions, ends cut off and thinly sliced
1 tablespoon olive oil
1/3 cup granulated white or brown sugar
1/3 cup balsamic vinegar
1/4 cup red wine vinegar
1 clove garlic, minced
* To sterilize jars, wash jars and lids in hot soapy water and rinse well. Heat oven to 300°F. Transfer clean jars and lids to oven for 20 minutes. Remove and let cool.
