Creamy avocado, sweet and juicy mango, and cherry tomatoes in a citrus vinaigrette make a refreshing and satisfying salad with a tropical twist! Serve on its own or on top of a bed of spring lettuce. This recipe makes 6 servings.
2 mangos, peeled and chopped
2 avocados, peeled and sliced
2 oranges, peel and white pith removed, cut into pieces
1 cup cherry tomatoes, halved
Butter lettuce or spring mix lettuce (optional)
Dressing:
⅓ cup extra virgin olive oil
⅓ cup freshly squeezed orange juice
¼ cup fresh lime juice
1 tablespoon honey
1 teaspoon kosher or sea salt
½ teaspoon freshly ground black pepper
1 shallot, minced
2 tablespoons cilantro, finely chopped (optional)
Whisk oil, orange and lime juice, honey, salt and pepper together, then mix in shallot and cilantro (if using).
Arrange mangos, avocados, cherry tomatoes and oranges on a plate as is or on top of a bed of lettuce.
Drizzle dressing over the top and enjoy!
