You can have a healthy and delicious side dish in a flash with this simple air fryer recipe. The touch of crispiness makes asparagus extra tasty, and all you need is a squeeze of lemon to finish it off. Feel free to add some red pepper flakes for a kick or grated parmesan cheese for even more flavour. Don’t have an air fryer? You can roast asparagus on a baking sheet at 400°F for 9 - 15 minutes (depending on thickness of stalks) until slightly tender yet still bright green.
1 pound asparagus
1 teaspoon extra virgin olive oil
¼ teaspoon kosher salt
⅛ teaspoon black pepper
Squeeze of fresh lemon
Pinch of red pepper flakes (optional)
Freshly grated parmesan cheese (optional)
Snap off the woody ends of asparagus stalks by bending a couple of inches from the end
Drizzle with olive oil, salt and pepper, then toss to coat
Preheat air fryer to 400° F
Arrange ½ of the asparagus in an even layer in air fryer basket (cook in two batches)
Air fry for 6 - 8 minutes, tossing halfway through.
Sprinkle with any optional toppings (lemon, parmesan, red pepper flakes)
