Equally delicious for dessert or breakfast, this mango chia pudding is healthy, creamy, sweet, and super easy to make using only 4 ingredients! This recipe makes 4 servings so you can enjoy it yourself for a few days or share it with others.
2 large ripe mangos
½ cup chia seeds
2 cups (480 ml) full-fat unsweetened canned coconut milk
4 tablespoons maple syrup (or sweetener of choice)
Optional toppings: shredded coconut, chopped nuts, granola
Scoop out the flesh of one mango and place in a blender or food processor. Process into a purée.
Chop other mango into chunks and set aside
Transfer puréed mango to a mixing bowl and add chia seeds, coconut milk, and maple syrup. Stir until well combined.
Put mixture into the fridge for approximately 15 minutes. Remove from the fridge, stir, then return to the fridge for another 15 minutes.
Remove from the fridge and transfer to serving dishes. Top with mango chunks and any optional toppings. Serve immediately.
You can store it in the fridge for up to 4 days in sealed containers. Mason jars work well.
