This salad has it all: fresh greens, creamy avocado, crunchy walnuts & little bursts of sweetness from red grapes! It’s a salad you’ll definitely crave if you have a bit of a sweet tooth. It pairs perfectly with a balsamic vinaigrette and you can top it off with a crumble of goat cheese, red onions, or some roasted pumpkin seeds for even more deliciousness.
Fresh arugula (enough for a full salad bowl, approximately 6 cups)
1 firmly ripe avocado, diced or sliced
2 cups red seedless grapes, halved
½ cup chopped walnuts (can substitute pecans)
Optional add-ons: ½ cup crumbled goat cheese, ¼ cup roasted pumpkin seeds, ½ a small, thinly sliced red onion.
For Balsamic Vinaigrette:
⅓ cup extra virgin olive oil
3 tablespoons balsamic vinegar
2 tablespoons honey or maple syrup
Sea salt and freshly ground black pepper to taste
Add all salad ingredients to a large bowl. Whisk vinaigrette and drizzle on top, then toss to combine. Sprinkle with any desired toppings. Serve immediately.
