Fresh Okanagan apricots are definitely tasty just as they are, but adding a little glaze and a few minutes on the grill will give you an extraordinarily delicious and versatile topping that you can enjoy any time of day! Try them on Greek yogurt for breakfast; as a topping for ice cream; add to salads; pair with toast or flatbread along with a soft cheese like brie or chevre; or even serve them with grilled meat dishes. Enjoy the sweet and slightly smoky flavour of these local treasures!
6 fresh apricots, halved and pitted
2 tablespoons honey
1 tablespoon lemon juice
½ teaspoon pure vanilla extract
Optional toppings: Chopped nuts, fresh herbs.
Preheat your grill to medium heat.
In a small bowl, whisk together the honey, lemon juice, and vanilla extract to make a glaze.
Brush the cut side of each apricot half generously with the glaze.
Place the apricot halves on the preheated grill, cut side down. Grill for about 2-3 minutes until grill marks appear and the apricots start to soften.
Carefully flip the apricot halves using tongs or a spatula, and brush the other side with the remaining glaze.
Grill for an additional 2-3 minutes until the apricots are tender but still hold their shape.
Remove from the grill and transfer to a serving plate.
If desired, sprinkle with chopped nuts (like almonds or pistachios), or garnish with fresh herbs.
