Make the most of the plentiful Okanagan prune plums available in August by whipping up these delightful and nutritious squares! The inherent sweetness of prune plums means you'll need minimal, if any, extra sweetening. Enjoy them for breakfast, as a decadent tea-time snack, or as a dessert.
2 cups oats (gluten-free if needed)
1 cup almond flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
Pinch of salt
1/4 cup coconut oil, melted
2 tablespoons honey or maple syrup (optional, for sweetness)
10-12 prune plums, pitted and sliced
Preheat the oven to 350°F (175°C) and grease a square baking pan.
In a large bowl, combine the oats, almond flour, baking powder, ground cinnamon, and salt.
Add the melted coconut oil and honey/maple syrup (if using) to the dry ingredients and mix until well combined.
Press two-thirds of the oat mixture into the bottom of the prepared baking pan to form a crust.
Arrange the sliced prune plums over the oat crust.
Sprinkle the remaining oat mixture evenly over the plums as a crumble topping.
Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown.
Allow to cool before cutting into squares.
