Refreshing, light, yet also satisfying, this grapefruit and avocado salad is an absolute favourite. Creamy avocado and juicy grapefruit are the perfect companions to fresh greens and a balsamic vinaigrette. You can make it even more of a meal by adding some almonds or extra protein.
2 ripe avocados, peeled, pitted, and sliced
2 grapefruits, peeled and segmented
1/4 red onion, thinly sliced
2 cups mixed greens (such as arugula or spinach)
1/4 cup chopped fresh cilantro or parsley (optional, for garnish)
For the Dressing:
2 tablespoons olive oil
1 tablespoon freshly squeezed grapefruit juice
1 tablespoon honey or maple syrup
1 tablespoon balsamic vinegar
Salt and pepper to taste
In a large salad bowl, arrange the mixed greens as the base.
Add the sliced avocados, grapefruit segments, and thinly sliced red onion on top of the greens.
In a small bowl, whisk together the olive oil, grapefruit juice, honey or maple syrup, balsamic vinegar, salt, and pepper. Taste the dressing and adjust the sweetness or acidity to your liking.
Drizzle the dressing over the salad.
Gently toss the salad to coat the ingredients with the dressing. Be careful not to mash the avocados.
If desired, garnish the salad with chopped cilantro or parsley for an extra burst of flavour and colour.
