8 cups of fresh broccoli florets
1 tablespoon olive oil
¼ cup mayonnaise
¼ cup Greek yogurt
2 teaspoons Dijon mustard
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 teaspoon garlic powder
¼ teaspoon cayenne pepper
1 cup cheddar cheese (grated and divided)
Optional:
½ cup Panko bread crumbs combined with 2 tablespoons melted butter
Preheat oven to 375°F and spray or wipe casserole dish with olive oil
Cook broccoli florets very briefly, just until tender crisp, in the microwave or by steaming.
In a large bowl, mix together the mayonnaise, yogurt, mustard, spices, and half of the cheddar cheese.
Add up to 1 tablespoon of water to thin the sauce.
Add drained broccoli florets and toss gently to coat.
Transfer broccoli and sauce mixture to the oiled baking dish.
Sprinkle remaining grated cheese on top.
Top with Panko bread crumbs, if using.
Bake until the casserole is golden brown and bubbling along the edges, approximately 15 - 20 minutes.
Let rest for about 5 minutes before serving.
