3 - 4 Ataulfo or regular mangos (1 ½ - 2 cups diced)
1 medium red bell pepper
1 jalapeño pepper (more or less for desired spice level)
1 small red onion, finely diced
¼ teaspoon salt
Juice of 1 lime
¼ cup fresh cilantro, chopped
Peel and dice mangoes.
Chop red peppers and finely dice red onions.
Cut jalapeño pepper lengthwise, scoop out seeds and discard, then chop finely.
Combine all ingredients in a bowl, add salt and pepper and lime juice, then toss gently to combine.
Wait at least 10 minutes to allow flavours to develop and then serve.
Best served fresh, but it will keep for up to 3 days in the fridge.
