Heirloom tomatoes not only have visual appeal, thanks to their varied hues and shapes—they also have unique, delicate flavours that make these gems an absolute delight. They’re a delicious snack just on their own, but to really enhance their flavours, add this simple vinaigrette to bring out every nuance of their taste profile.
1 pint heirloom grape or cherry tomatoes
2 tablespoons extra virgin olive oil
2 teaspoons red wine vinegar
¼ teaspoon dried thyme
¼ teaspoon salt
¼ teaspoon freshly ground pepper
Fresh basil leaves to garnish (sliced thinly)
Slice larger tomatoes into halves and place in a bowl.
Add olive oil, vinegar, thyme, salt and pepper to a jar. Close the lid and shake well to combine.
Pour dressing over tomatoes and toss gently to coat.
Top with basil leaves.
Best served fresh at room temperature but will keep for one day in the fridge.
