A refreshing salad for a sunny day! Cantaloupe melon is a great source of beta carotene and vitamin C, and adds a touch of sweetness to this salad, featuring tangy feta and refreshing cucumber, lime and mint.
2 cups cantaloupe melon, skin removed and cut into chunks
1 long English cucumber, chopped (about 2 cups)
1/2 cup feta cheese, crumbled (or Vegan alternative)
2 tablespoon olive oil
Juice from 1 lime
Salt and pepper to taste
Mint leaves, torn or chopped, to garnish
Combine all ingredients in a large mixing bowl and toss to combine. Serve immediately or after chilling in the refrigerator. Salad will keep for up to 3 days in the refrigerator. To add more substance to the salad, you can add quinoa or chickpeas, along with additional olive oil and lime juice.
