BC Grown on-the-vine tomatoes shine in this simple and tasty salad, partnered with creamy avocado. This recipe is very flexible, so use what you have on hand for extras: cucumber, red onion, and fresh herbs make lovely additions.
4 ripe tomatoes on the vine, chopped
2 avocados, diced
1 small red onion, diced (optional)
1 Long English cucumber, diced (optional)
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste
Fresh basil leaves or other herbs (optional)
Prepare vegetables and add to a large bowl, along with any fresh herbs (if using), reserving some to garnish.
Whisk together the olive oil, balsamic vinegar, and salt and pepper.
Drizzle dressing over the salad and toss gently to coat.
Tip: If your avocados are not very firm, add them in after mixing the dressing with other ingredients.
