Here's a clever new way to enjoy delicious and nutritious cauliflower—just in time for barbecue season!
1 large head of cauliflower
3 tablespoons olive oil
Salt and pepper to taste
1 cup store-bought or homemade pesto
Fresh basil leaves
Lemon wedges, for serving
Preheat the Grill: Preheat your grill to medium-high heat.
Prepare the Cauliflower: Remove the outer leaves from the cauliflower and trim the stem end, but leave the core intact. Cut the cauliflower into 1-inch thick slices (steaks). You should get about 2-3 steaks from a large cauliflower, with some smaller florets from the sides.
Season the Steaks: Brush both sides of the cauliflower steaks with olive oil and season with salt and pepper.
Grill the Cauliflower: Place the cauliflower steaks on the preheated grill. Cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks. Use a spatula to carefully flip the steaks halfway through grilling.
Top with Pesto: Once the cauliflower steaks are cooked, remove them from the grill and place them on a serving platter. Generously top each steak with pesto.
Garnish and Serve: Garnish with fresh basil leaves, and serve with lemon wedges for an extra burst of flavour.
