Taco night, done light! Crisp Romaine lettuce stands in for taco shells in this quick and healthy take on a classic. Load ‘em up with any of your usual taco fixings and enjoy!
1 tablespoon olive oil
½ cup chopped onion
1 lb lean ground turkey (can substitute beef or tofu crumble)
2 cloves garlic
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon paprika
½ cup tomato sauce
½ cup chicken or vegetable broth
Salt and pepper to taste
Optional Toppings: diced tomatoes, diced avocados, cheese, black beans, corn, cilantro, sour cream, etc.
Heat olive oil in a non-stick skillet over medium-high heat.
Add onion and sauté 2 minutes.
Add ground turkey (or alternative), garlic, salt and pepper and cook, breaking up occasionally, until cooked through.
Add remaining spices, tomato sauce, and broth. Cook until sauce is reduced, about 5 minutes.
Serve filling in lettuce leaves with desired toppings.
