When you’re craving something fresh and healthy with a kick, this salad is a winner. A touch of honey balances the heat and the ginger adds an extra punch, while providing some anti-inflammatory benefits. It works great with beetroot in place of carrots too!
4 carrots, coarsely grated
1 tablespoon fresh ginger, finely grated
1 chilli or jalapeño pepper, seeded and finely chopped
1 garlic clove, minced
1 lemon or 2 limes, juice and zest
¼ cup olive oil
Sea salt to taste
Honey to taste (optional)
A handful of fresh cilantro, chopped
In a large bowl, mix together carrots, ginger, chilli, garlic and lemon or lime juice. Add olive oil and salt, then toss.
Allow flavours to mingle for at least 15 minutes, or overnight, before serving.
For a touch of sweetness, add a drizzle of honey and mix.
Top with fresh cilantro before serving.
