This simple kale salad is a fresh and nutritious choice for any meal. Packed with vibrant flavours, it's a tasty way to enjoy your greens! Keep it minimal, or add extras like cherry tomatoes, shredded purple cabbage, or chickpeas for an extra boost.
For the Salad:
1 large bunch of kale, stems removed and leaves chopped
1-2 tablespoons olive oil (to massage into kale leaves)
1/4 cup toasted almonds or sunflower seeds
1/4 cup grated Parmesan cheese (optional)
Additional ingredients if desired (cherry tomatoes, shredded cabbage, chickpeas, etc.)
For the Lemon Garlic Dressing:
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1 clove garlic, minced
1 teaspoon Dijon mustard
Salt and pepper to taste
Prepare the Kale:
