Zucchini Fritters
Transform garden-fresh local zucchini into something truly irresistible! These crispy, golden Zucchini Fritters are the perfect way to make the most of that extra summer squash. With a crunchy exterior and a tender, flavourful centre, they’re a mouthwatering treat that will have everyone reaching for seconds.
Ingredients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/4 cup finely chopped onion
- 1 large egg, lightly beaten
- 1/4 cup grated Parmesan cheese
- 1/4 cup all-purpose flour (or substitute with almond flour for a gluten-free option)
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- 2 tablespoons chopped fresh herbs (such as dill, parsley, or chives)
- Avocado oil for frying
Directions
- Grate the zucchinis and place them in a colander. Sprinkle with salt and toss to combine. Let it sit for 10 minutes to draw out the moisture. After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much moisture as possible from the grated zucchini.
- In a large bowl, combine the grated zucchini, chopped onion, egg, Parmesan cheese, flour, black pepper, garlic powder (if using), and fresh herbs. Mix until well combined.
- Heat a large skillet over medium heat and add enough avocado oil to cover the bottom. Scoop a spoonful of the zucchini mixture into the skillet and flatten it gently with the back of the spoon to form a fritter. Repeat with the remaining mixture, making sure not to overcrowd the pan.
- Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
- Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.
- Sprinkle with herbs and serve warm with your favourite dipping sauce, such as sour cream, tzatziki, or a squeeze of lemon.
