Looking for a fresh, flavourful salad with a fall twist? This roasted beet and apple salad with creamy goat cheese and a tangy balsamic dressing is the perfect blend of sweet, savoury, and crunchy! It’s easy to make, wholesome, colourful, and packed with flavour!
3 medium beets, cubed
1 apple (Granny Smith or Honeycrisp), thinly sliced
100g goat cheese, crumbled
4 cups mixed greens (arugula or spinach work well)
1/4 cup candied or toasted pecans or walnuts (optional)
Balsamic Dressing:
3 tbsp balsamic vinegar
2 tbsp olive oil
1 tsp Dijon mustard
1 tsp honey
Salt & pepper to taste
Preheat your oven to 400°F (200°C). Toss the cubed beets in 1 tbsp of olive oil, season with salt and pepper, and spread them on a baking sheet. Roast for 30-35 minutes, stirring halfway through, until tender and caramelized. Let them cool.
In a small bowl, whisk together all the dressing ingredients until smooth.
Assemble your salad: arrange mixed greens, roasted beets, apple slices, goat cheese, and nuts (if using) on a plate. Drizzle with balsamic dressing and serve.
