4 large russet potatoes, peeled and thinly sliced
2 cups heavy cream (or milk for lighter version)
1 cup shredded cheddar cheese (optional)
2 tbsp butter
1 medium onion, finely diced
2 cloves garlic, minced
1 tsp fresh thyme leaves
Salt and pepper to taste
Preheat your oven to 375°F (190°C). Grease a baking dish with butter.
In a saucepan, melt butter over medium heat. Add onion and garlic, cooking until soft. Stir in cream, thyme, salt, and pepper.
Layer half the potatoes in the baking dish, pour over half the cream mixture, and sprinkle some cheese if using. Repeat the layers.
Cover with foil and bake for 45 minutes. Remove foil, bake another 20-30 minutes until potatoes are tender and top is golden.
