1 medium spaghetti squash
2 tablespoons olive oil
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Salt and pepper, to taste
Roast the squash: Preheat your oven to 400°F (200°C). Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the cut sides with 1 tablespoon olive oil, sprinkle with salt and pepper, and place cut-side down on a baking sheet. Roast for 30-40 minutes, or until the flesh is tender and easily shredded with a fork.
Prepare the garlic: In a small skillet, heat the remaining 1 tablespoon olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Remove from heat.
