This crisp and colourful slaw is a perfect balance of crunch and tangy sweetness. With fresh celery, juicy apples, and vibrant carrots tossed in a zesty lemon dressing, it's light, refreshing, and packed with flavour.
1 bunch celery (8-10 stalks)
1 crisp tart apple (e.g., Granny Smith or Pink Lady)
2 medium carrots, cut into matchsticks
1/4 cup chopped parsley
2 tablespoons sunflower seeds (optional)
Dressing:
1/4 cup lemon juice (about 1 1/2 lemons)
1 tablespoon honey
1 teaspoon Dijon mustard
1/4 cup olive oil
Salt and pepper to taste
1. Wash and trim the celery, then slice it thinly. Add to a large bowl.
2. Cut the apple and carrots into matchsticks (no need to peel the apple). Add to the bowl with the celery.
3. Add the parsley and sunflower seeds (if using) to the bowl.
4. In a small jar, combine lemon juice, honey, and Dijon mustard. Shake well, then add olive oil and shake again until smooth. Season with salt and pepper to taste.
5. Drizzle the dressing over the slaw and toss to coat. Adjust seasoning if needed and serve immediately.
