Brighten up your table with this stunning side dish! This quick and flavourful side is a winter favourite. The mix of tender green beans, crunchy walnuts, tangy feta, and sweet cranberries is a guaranteed crowd-pleaser. Try it with brown rice for a meal on its own, or alongside roast chicken or salmon.
Bring a pot of water to a boil. Add green beans and boil 3 - 5 minutes until tender crisp. Drain, then immediately plunge into a bowl of cold water. Drain well.
Melt butter (or heat olive oil) in a large skillet over medium heat. Add garlic and sauté 1 minute. Add in drained green beans and sauté until heated through.
Add in walnuts, cranberries and lemon juice and season with salt and pepper to taste.
Sprinkle in feta and lemon zest. Serve warm.
