Tender zucchini is filled with a savoury turkey and veggie mixture, topped with melty cheese, and baked to perfection. It’s an easy, wholesome dinner that’s big on taste, simple to make, and fun to eat!
2 medium zucchinis, halved lengthwise
1/2 lb ground turkey (or beef)
1/2 cup marinara sauce
1/4 cup diced onion
1/4 cup diced bell pepper
1/2 tsp garlic powder
1/2 tsp Italian seasoning
Salt & pepper, to taste
1/4 cup shredded mozzarella cheese
2 tbsp grated Parmesan (optional)
Preheat oven to 375°F (190°C). Scoop out zucchini centres, leaving a 1/4-inch shell. Chop the scooped-out flesh.
In a pan, cook ground turkey, onion, and bell pepper until browned. Add chopped zucchini flesh, marinara sauce, and seasonings. Simmer for 5 minutes.
Fill zucchini halves with the meat mixture. Top with mozzarella and Parmesan.
Bake for 20–25 minutes, until zucchini is tender and cheese is bubbly.
