Golden, crispy, and packed with flavour, these Crispy Smashed Red Potatoes are the perfect side dish or snack! They roast up beautifully crunchy on the outside while staying fluffy inside. Top them with fresh herbs and pair them with chipotle or garlic mayo for the ultimate dip-worthy bite!
1.5 lbs red potatoes
2 tbsp olive oil
1 tsp garlic powder
½ tsp smoked paprika (optional)
Salt & pepper, to taste
Fresh herbs (parsley, chives, or rosemary), for garnish
Place potatoes in a pot of salted water and bring to a boil. Cook for 15–20 minutes, or until fork-tender. Drain and let cool slightly.
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Place potatoes on the sheet and gently smash each one with the bottom of a glass or a fork.
Drizzle olive oil over the potatoes, then sprinkle with garlic powder, paprika, salt, and pepper.
Roast for 20–25 minutes, flipping halfway, until crispy and golden brown.
Sprinkle with fresh herbs. Serve hot and enjoy!
