Crisp, fresh, and full of texture, this simple salad combines romaine hearts with sweet apples, toasted walnuts, and a light, tangy dressing. Add a sprinkle of cheese or cranberries for an extra burst of flavour—it’s a refreshing side that comes together in minutes!
2 romaine hearts, chopped or halved lengthwise
1 apple, thinly sliced
1/3 cup walnuts, toasted
Optional: 1/4 cup crumbled feta or goat cheese
Optional: a handful of dried cranberries
For the dressing:
2 tbsp olive oil
1 tbsp apple cider vinegar (or lemon juice)
1 tsp honey or maple syrup
Salt and pepper to taste
Toast the walnuts in a dry pan over medium heat for 2–3 minutes until fragrant.
Whisk the dressing ingredients together in a small bowl.
Place romaine on a plate and top with apple slices, walnuts, and optional cheese/cranberries. Drizzle with dressing just before serving.
