
Add some sizzle to your dinner game with these vibrant Mixed Bell Pepper Fajitas! Choose your favourite protein—chicken, steak, prawn, or plant-based —and pile it high with smoky peppers, fresh guac, and all the fixings. Easy, flexible, and packed with flavour.
3 bell peppers (red, yellow, green), sliced
1 large red onion, sliced
1 lb chicken, steak strips, or vegan crumble
2 tbsp olive oil
2 tbsp fajita seasoning (store-bought or homemade – see below)
1 lime, juiced
Tortillas (flour or corn)
Optional Toppings:
Guacamole, salsa, shredded cheese, sour cream, fresh cilantro, lime wedges
Homemade Fajita Seasoning:
1 tsp chili powder
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp dried oregano
1/4 tsp cayenne pepper (optional, for extra heat)
Salt and pepper to taste
Prepare the seasoning: If making your own, combine all fajita seasoning ingredients in a small bowl.
Prepare the protein: Season chicken, steak strips, prawns, or vegan protein with half of the fajita seasoning. Set aside.
Cook the veggies: Heat olive oil in a skillet over medium-high heat. Sauté bell peppers and onion until slightly charred and tender. Remove and set aside.
Cook the protein: In the same skillet, cook the seasoned protein until fully cooked and lightly browned. Squeeze lime juice over the protein and sprinkle with remaining fajita seasoning.
Combine: Return the peppers and onions to the skillet and toss to combine.
Serve: Warm tortillas and fill with the fajita mixture. Add any desired toppings and finish with a squeeze of lime.
