
Sweet, salty, crisp, and refreshing—this cantaloupe & feta salad is summer in a bowl. Juicy melon, tangy feta, and a crunch of pumpkin seeds come together in a light, flavourful dish that’s perfect for patio season. Serve it as a starter, side, or a simple lunch.
1/2 ripe cantaloupe, peeled and cut into cubes or scooped into balls
1/4 small red onion, very thinly sliced
1/3 cup crumbled feta cheese
1/4 cup fresh parsley leaves, roughly chopped
2 tbsp roasted pumpkin seeds
1 tbsp extra virgin olive oil
1 tsp white wine vinegar or fresh lemon juice
Freshly ground black pepper, to taste
Pinch of sea salt (optional)
In a large bowl, gently combine the cantaloupe, red onion, feta, and parsley.
Drizzle with olive oil and vinegar (or lemon juice).
Season with black pepper and a light pinch of salt if needed.
Sprinkle pumpkin seeds on top just before serving for crunch.
Serve immediately or chill briefly before serving.
