
This rustic grilled asparagus and white bean salad is simple, satisfying, and full of flavour. With smoky grilled asparagus, creamy beans, and a zesty lemon-Dijon dressing, it’s a nourishing dish that works beautifully as a light lunch or a side for your next BBQ.
1 bunch asparagus, trimmed and cut into 1–2 inch pieces
1 can (398 ml) white beans (e.g., cannellini or navy beans), drained and rinsed
1/4 cup red onion, thinly sliced
1/4 cup fresh dill or mixed herbs, chopped
2 tbsp extra virgin olive oil
1 tbsp lemon juice (plus extra for drizzling)
1 tsp lemon zest
1 tsp Dijon mustard
Salt and pepper to taste
Optional:
A sprinkle of crumbled feta or shaved Parmesan
Handful of arugula or baby greens for serving
Preheat a grill or grill pan over medium-high heat. Lightly toss the asparagus with a bit of olive oil and a pinch of salt. Grill for 3–4 minutes, turning occasionally, until tender with light char marks. Let cool slightly, then cut into 1–2 inch pieces.
In a large bowl, combine asparagus, white beans, red onion, and herbs.
In a small bowl, whisk together olive oil, lemon juice, zest, Dijon, salt, and pepper.
Pour dressing over salad and toss gently to combine.
Serve as-is or over greens, with optional cheese sprinkled on top.
