
Skip the bag and make your own crispy, golden potato chips at home! These air fryer russet chips are perfectly seasoned, irresistibly crunchy, and pair beautifully with a tangy garlic yogurt dip. A lighter take on a classic snack—quick to make and fun to share.
Potato Chips:
2 large russet potatoes
1 tbsp olive oil
1/2 tsp sea salt
Optional: cracked black pepper, paprika, or dried herbs
Garlic Yogurt Dip:
1/2 cup plain Greek yogurt
1 tbsp olive oil
1 small garlic clove, finely grated or minced
1 tsp lemon juice
Pinch of salt
Scrub potatoes well and slice very thinly using a mandoline or sharp knife (aim for about 1/16-inch).
Soak slices in cold water for 20–30 minutes to remove excess starch. Drain and pat very dry.
Toss with olive oil and salt.
Arrange in a single layer in the air fryer basket (work in batches if needed).
Air fry at 350°F (175°C) for 12–16 minutes, flipping once halfway through, until golden and crisp.
Let cool slightly—they’ll crisp up more as they cool.
Garlic Yogurt Dip: Whisk all ingredients together in a small bowl. Let sit for 10 minutes to allow the garlic to mellow. Chill until ready to serve.
