
Looking for a fresh new idea for grilling season? These colourful veggie and halloumi skewers are quick to prep and full of flavour—crispy on the outside, melty in the middle, and paired with a smoky chipotle mayo for a bold dipping twist. A vibrant summer meal or side dish that’s easy to love!
(For 4-5 skewers)
1 small zucchini, sliced into ½-inch rounds
1 bell pepper (orange or red), chopped into chunks
½ small red onion, cut into wedges
10–12 cherry or grape tomatoes
200g halloumi cheese, cut into 1-inch cubes
1 tbsp olive oil
Salt and pepper to taste
Fresh parsley (optional, for garnish)
Metal or soaked wooden skewers
Smoky Chipotle Mayo Dip:
½ cup mayo (regular or vegan)
1–2 tsp chipotle in adobo sauce (more or less to taste)
1 tsp lime juice
½ tsp smoked paprika (optional, for extra smokiness)
Pinch of salt
Preheat grill or grill pan to medium-high heat.
In a bowl, toss zucchini, peppers, onion, and tomatoes with olive oil, salt, and pepper.
Thread veggies and halloumi onto skewers, alternating for colour and balance.
Grill skewers for 8–10 minutes, turning occasionally, until veggies are tender and halloumi is golden with grill marks.
While the skewers cook, stir together all dip ingredients in a small bowl. Adjust heat level to your preference.
Serve skewers warm with chipotle mayo on the side for dipping.
