4 ears of corn, husked
2-3 tbsp mayonnaise
1/2 cup cotija cheese (or feta as a substitute), crumbled
1 lime, cut into wedges
1/2 tsp chilli powder (or more to taste)
1/4 cup chopped cilantro (optional)
1 tbsp butter (optional, for extra richness)
Salt to taste
Preheat grill to medium-high heat.
Grill corn directly on the grates, turning occasionally, until nicely charred on all sides (about 7–10 minutes).
While corn is grilling, mix mayo with a little lime juice and a pinch of salt in a small bowl.
Once grilled, brush each cob with the mayo mixture.
Sprinkle generously with crumbled cheese, dust with chili powder, and add cilantro if using.
