6 ripe Bartlett pears (peeled, cored, and sliced)
2 tbsp lemon juice
⅓ cup brown sugar (adjust to pear sweetness)
1 tsp vanilla extract
1 tsp cinnamon
¼ tsp nutmeg
1 tbsp cornstarch
Crisp Topping:
1 cup rolled oats
½ cup all-purpose flour (or almond flour for GF option)
½ cup brown sugar
½ tsp cinnamon
¼ tsp salt
½ cup cold butter (cut into small cubes)
Preheat oven to 350°F (175°C).
Toss sliced pears with lemon juice, sugar, vanilla, cinnamon, nutmeg, and cornstarch. Spread evenly in a buttered 9x13" baking dish.
In a bowl, mix oats, flour, brown sugar, cinnamon, and salt. Cut in butter with a pastry cutter or your fingers until crumbly.
Sprinkle topping evenly over pears.
Bake for 35–40 minutes, until topping is golden brown and filling is bubbling.
Cool slightly before serving.
