
This Peach Caprese Salad is a fresh twist on the classic Italian favourite. Juicy peach slices are layered with ripe tomatoes, creamy mozzarella, and fragrant basil leaves. A drizzle of olive oil and balsamic glaze adds the perfect balance of richness and tang. Finished with a light sprinkle of salt and cracked black pepper, it's a simple, refreshing summer starter or side.
2–3 ripe peaches, sliced into wedges
2–3 ripe tomatoes (heirloom or cherry), sliced
8 oz fresh mozzarella (sliced or torn into chunks)
Fresh basil leaves
2 tbsp extra virgin olive oil
1 tbsp balsamic glaze (or reduction)
Salt & freshly cracked black pepper, to taste
On a platter, layer slices of peaches, tomatoes, and mozzarella. Tuck in fresh basil leaves. Top with olive oil and balsamic glaze, and sprinkle lightly with salt and freshly cracked pepper. Serve immediately as a light summer starter or side.
