This Skillet Apple Crisp is a cozy dessert made with tart Macintosh apples and a buttery oat topping. The apples are tossed with lemon juice, sugar or maple syrup, spices, and cornstarch, then lightly cooked in a cast-iron skillet before baking with the crumbly oat mixture until golden and bubbly. Serve warm with ice cream, whipped cream, or yogurt for a simple, comforting treat.
6 medium Macintosh apples, peeled, cored, sliced
2 tbsp lemon juice
½ cup granulated sugar (or maple syrup)
1 tsp cinnamon
½ tsp nutmeg
2 tsp cornstarch
Pinch of salt
Topping
1 cup rolled oats
½ cup all-purpose flour (or almond flour for GF)
½ cup brown sugar
½ tsp cinnamon
Pinch of salt
½ cup cold unsalted butter, cubed
Preheat oven to 350°F (175°C). Place a 10–12" oven-safe skillet (cast iron works great) on medium heat. Toss sliced Macintosh apples with lemon juice, sugar, spices, cornstarch, and salt. Melt 1 tbsp butter in the skillet, then add the apple mixture. Cook 5–7 minutes, stirring occasionally, until apples just start to soften and release juices. Remove from heat. In a bowl, mix oats, flour, brown sugar, cinnamon, and salt. Cut in cold butter with a fork or your fingers until crumbly. Sprinkle topping evenly over the apples and bake for 30–35 minutes, until golden brown and bubbling at the edges. Let sit 10 minutes so the juices thicken slightly. Serve warm with vanilla ice cream, whipped cream, or Greek yogurt.
