4 cups green or purple cabbage, thinly shredded
1 large carrot, julienned or grated
1 red bell pepper, thinly sliced
½ cup fresh cilantro leaves, roughly chopped
⅓ cup toasted pumpkin seeds (pepitas)
2 green onions, thinly sliced (optional)
Dressing:
3 tbsp olive oil (or avocado oil)
2 tbsp fresh lime juice (or lemon juice)
1 tbsp apple cider vinegar
1 tbsp honey or maple syrup (optional for sweetness)
1 tsp Dijon mustard
Salt & pepper to taste
