2 ripe mangoes, peeled and diced
½ red bell pepper, finely diced
¼ red onion, finely diced
1 small jalapeño (seeded for less heat), minced
Juice of 1 lime
2 tbsp chopped fresh cilantro
Salt to taste
In a medium bowl, combine mango, bell pepper, red onion, and jalapeño. Add lime juice, cilantro, and a pinch of salt.
Toss gently to combine and let sit 10–15 minutes before serving to let the flavours mingle.
