
Crisp, colourful, and bursting with winter flavours, this Winter Crunch Slaw is the perfect side for any meal. Sweet pears, crunchy nuts, and a zesty citrus vinaigrette create a refreshing balance that’s as nutritious as it is delicious. A simple toss is all it takes to elevate your plate with vibrant, seasonal goodness.
1 medium head green cabbage, thinly sliced
4 cups kale, thinly sliced
2 pears, cut into matchsticks
1 large shallot, thinly sliced
¾ cup shredded carrots
½ cup pomegranate arils (or dried cranberries if fresh aren’t available)
⅓ cup roasted pepitas
⅓ cup chopped toasted walnuts or pecans
Salt & pepper
For the citrus-vinaigrette:
2 tbsp fresh orange juice
1 tbsp red wine vinegar
1 tsp orange zest
1 tsp honey
1 tsp Dijon mustard
1 minced garlic clove (or pressed)
¼ tsp salt
¼ tsp pepper
½ cup extra virgin olive oil
In a large bowl, toss together cabbage, kale, pear matchsticks, thinly sliced shallot, carrots, and pomegranate arils. Sprinkle with a pinch of salt and pepper.
Add the pepitas and chopped nuts.
In a small bowl or jar, whisk (or shake) together all vinaigrette ingredients until well blended.
Drizzle a few tablespoons of dressing over the slaw, toss well, and let it sit 5–10 minutes before serving — this softens the veggies just enough while keeping great crunch.
Taste, then add more salt/pepper or extra dressing if you like.
