
Healthy, hearty, and downright delicious. These Butternut Squash Fritters are packed with flavour, easy to make, and pair perfectly with a simple yogurt dip. Crispy on the outside, tender on the inside—pure veggie magic on a plate!
2 cups grated butternut squash (peeled & seeded)
1/4 cup finely chopped onion (or green onion)
1 egg
1/4 cup flour (or chickpea flour / GF blend)
1/4 cup grated Parmesan (optional)
1 clove garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp smoked paprika or cumin
Pinch of nutmeg (optional, but lovely)
Olive oil or avocado oil for frying
Grate the squash and squeeze out excess moisture with a clean towel.
In a bowl, combine squash, onion, egg, flour, Parmesan (if using), garlic, salt, pepper, spices, and any herbs.
Heat a thin layer of oil in a skillet over medium heat. Scoop 2 Tbsp per fritter, flatten slightly, and cook 3–4 minutes per side until golden.
Transfer to a paper towel–lined plate. Season lightly with salt.
