
This lemon garlic green bean recipe is all about fresh ingredients and bold, simple flavour. Tender green beans are tossed with fragrant garlic and a squeeze of lemon for a bright, feel-good side you’ll make on repeat.
1 lb fresh green beans, trimmed
1–2 tbsp olive oil (or butter)
2–3 cloves garlic, thinly sliced or minced
Zest of 1 lemon
Juice of ½–1 lemon (to taste)
Salt & freshly cracked black pepper
Optional: chili flakes, grated parmesan, or toasted almonds
Bring a pot of salted water to a boil. Add green beans and cook 2–3 minutes until bright green and just tender. Drain and immediately transfer to ice water to stop cooking. Drain again and pat dry.
Heat olive oil in a large skillet over medium heat. Add garlic and cook 30–60 seconds until fragrant (don’t let it brown).
Add green beans to the skillet. Season with salt and pepper and sauté for 2–3 minutes until heated through.
Remove from heat. Stir in lemon zest and lemon juice. Taste and adjust seasoning.
